Veggie Lentil Cottage Pie

This is an absolute fave on our house, so easy to make, packed full of goodness and so great for freezing too 🙌🏻


(The veggies and absolutely be swapped out for what you have available)

1 Onion
1/2 Leek
Couple of cloves of garlic
Splash oil
2 x Carrots
1 Cup of mushrooms (optional)
1 x Celery stalk
1 x Courgette

2 Cans of Lentils
1 x tinned tomatoes
1/2 bottle passata (or to taste)
1/2 cup of stock
2 TBSP Petite Eats Power Packed Meal Blend 🥕

3 x Large Orange Kumara
1 x Large Potato
Knob of butter
Milk (enough to get desired consistency)
1 Cup of Cheese


Blitz onion, garlic, celery and leek and sauté and on medium heat in a large pot with oil.

Bring a seperate large pot to the boil. Peel and chop kumara and potato and add to the pot.

Grate or finely chop carrots and others veggies. Add to pot with the onion. Stir for a few minutes to infuse flavour. Add lentils, stock, tomatoes and passata. Leave to simmer for 30mins or so.

Drain the kumara and potato, strain and add butter and milk & mash. Season with salt.

Pour lentil mix into an oven dish, top with mash and cheese. I also added some pumpkin seeds on top too.

Pop into an oven at 200C for 30mins or until cheese is golden.

This makes quite a big serve so I often get a small freezer meal out of it.
