Buckwheat Pancakes

Our Ingredients Reading Buckwheat Pancakes 2 minutes Next Veggie Lentil Cottage Pie

This recipe is a fave in our house and so easy to prepare. The kids love helping out with this one too. 


  • 1 mashed ripe banana
  • 1 egg
  • 1 cup of buckwheat flour (normal flour can also be used)
  • 1 tsp baking powder
  • 3 TBSP Petite Eats Berry Blast Smoothie Blend
  • 1/2 cup milk (or more if needed to get desired consistency)


  • Maple Syrup
  • Blueberries
  • Chopped Nuts


  1. Peel the banana and mash with a fork in a mixing bowl, add the egg and beat together. Sift flour and baking powder into the bowl, add the Berry Blast Smoothie Blend and the milk and gently stir together until combined. Check the consistency and add more milk if needed. It should be thick but pourable.
  2. Heat a large fry pan over a medium heat, add butter and wait until pan it hot before pouring mixture. Wait for bubbles to appear before flipping (about 2mins) and then another 1-2 mins on the other side. 
  3. Set aside and repeat. You can make these as large pancakes or pikelets. 
  4. Serve with your favourite toppings ♡
