Buckwheat Pikelets

Buckwheat Pikelets: 


1 Mashed Ripe Banana

1 Cup Buckwheat Flour

1 Egg (whisked)

1tsp Baking Powder

¾  CupMilk

¼ Cup Yoghurt

Optional: add ¼ Cup Choc Chips to your final mixture


Time to put your apron on….

  1. Peel and mash banana in a mixing bowl.
  2. Add in egg and yoghurt and mix well.
  3. Add the dry ingredients into the wet mixture and fold gently. Don’t worry about lumps too much as these are likely from the banana. If you mixture is looking too dry add a splash of milk or water until you have a thick but pourable batter.
  4. Heat a large non-stick fry pan with a small amount of either butter or oil and pour in your mixture (roughly ¼ cup). Once bubbles begin to appear, flip over and to the other side and cook for another 1-2mins. 
  5. Serve with your favourite toppings. For our kids it’s natural yoghurt and berries! 

Makes Approximately 16 pikelets.
