Refined Sugar Free Banana Bread:

Ingredients :

2 Mashed Bananas

1 ½ Cups Flour (regular or GF)

2 Eggs

⅓ Cup of Melted Butter or Coconut Oil

⅓ Cup Maple Syrup

¼ Cup Natural Yoghurt

1tsp Baking Soda

½ tsp Baking Powder

1tsp Vanilla Essence

Preheat the oven to 180C.

  1. Mash Banana in a large mixing bowl. 
  2. Beat eggs and add to the banana mixture along with the maple syrup, vanilla and melted butter.
  3. Add yoghurt, baking soda, baking powder and mix. Finally, sift the flour in and gently stir to combine. 
  4. Line loaf tin with silicone baking mat or baking paper. Pour in mixture and bake for 50 mins. 

Optional extras: add ½ cup of blueberries into your mixture

Storage:  Keep in an airtight container for up to three days or freeze for up to 3 mths.
